Tuna Salad

Pantry Shelf Gourmet Tuna Salad Sandwich


INGREDIENTS:
• 1 (170 gram) can Pantry Shelf Flaked White Albacore Tuna
• 1 (170 gram) can Pantry Shelf Flaked Light Tuna
• (if packed in water, drain and add a teaspoon of good quality olive oil)
• 1/3 cup cottage cheese
• 4 tablespoons mayonnaise
• 1/2 purple onion, chopped finely
• 2 celery stalks, chopped finely
• 4 tablespoons finely chopped green onions
• Juice of half of a lemon
Pinch or two of dill
• 2 tablespoons minced fresh parsley
• 2 teaspoons Pantry Shelf prepared mustard
Salt & Pepper to taste
• (optional - lettuce and sliced tomatoes)
• Slices of French bread or bagels lightly toasted & buttered

PREPARATION:
Mix all of the ingredients. Serve on buttered toast, either open faced, or in a regular sandwich with lettuce and tomatoes garnished with Pantry Shelf Pickles. For a low carb option, serve on a leaf of lettuce.

Makes 4 – 6 generous servings
